We believe that healthy eating does NOT have to be boring or tasteless and this Baked Salmon with Fresh Dill recipe is testament to that belief!
Succulent, flaky, baked salmon with the light, lemony tang only Fresh Dill carries is a match made in culinary heaven! What's even better is the guilt-free sensation as you chow down on this good Omega-3 Fatty Acids rich dish. It is also high in B Vitamins, is a great source of Vitamin C and Antioxidants.
Ingredients
100gm VertiVegies Dill
800gm - 1kg Fresh Salmon (filleted into 200gm - 250gm steaks)
1 Head of Garlic (peeled)
1 tbsp Sea Salt
1 tbsp Crushed Black Pepper
1 tbsp Olive Oil
Recipe
Preheat oven to 180C. Lay 50gms of Dill and clove of garlic on a baking tray lined with foil. Place Salmon steaks on top of the herbs with the skin side facing towards the foil. In a bowl, whisk in olive oil, black pepper and salt until combined. Drizzle the olive oil marinade on the fish ensuring that all parts of the exposed fish has been coated. Layer the balance Dill on top of the salmon and bake for 20 minutes. Remove from the oven and serve immediately with Rosti and Sour Cream.
Pro Tip
Add slices of lemon on both sides of the fish for that added zesty tang!
