Ingredients
500gm VertiVegies Baby Spinach
2 Yellow Onions
1 Cup Heavy Cream
2 Cups Full Cream Milk
1/4 Tsp Grated Nutmeg
1/4 Cup Flour
4 Tbsp Unsalted Butter
1 Cup Parmesan Cheese
1/2 Cup Gruyere Cheese
Salt and Pepper To Taste
Recipe
Preheat oven to 210C. Chop onions and grate cheese. Melt butter in a heavy saucepan over medium heat. Add in the onions and cook till they are soft and translucent, about 15 minutes. Add the flour and nutmeg and stir for an additional 2 minutes. Add in the cream and milk and cook till the mixture is thickened, stirring continuously. Add in the Spinach and 1/2 cup of parmesan cheese to the sauce and continue to mix well. Season with salt and pepper to taste, transfer to a casserole pot and sprinkle the remaining cheese into the mix. Bake for 20 minutes. Remove from the oven and serve piping hot!
