With only 30 minutes of prep time, this tasty, nutty and healthy roasted Pak Choi dish is not only lightning quick to prepare, but is also low in carbs and packed full of nutrients. The addition of ginger and chili to this dish brings out additional layers of complexity and marries the ingredients together.

Ingredients
250 gm VertiVegies Green Pak Choi
5 slices ginger
1 green chili
2 tbsp olive oil
1 tbsp light soy sauce
1 tsp sesame oil
1 tsp red wine vinegar
1 tsp sugar
1 tsp toasted sesame seeds
Cracked black pepper
Recipe
Preheat oven to 180C. Slice Pak Choi and place on a baking sheet. Drizzle olive oil over Pak Choi and crack black pepper generously. Slice and deseed chili. Place chili and ginger around the Pak Choi and pop in the oven to roast for 6 - 8 minutes or until the stalks have become tender.
In a separate bowl, whisk sesame oil, light soy sauce, sugar and red wine vinegar until combined. Remove Pak Choi from the oven and place on a serving dish. Drizzle sauce over Pak Choi and top with toasted sesame seeds. Enjoy as a snack or as an accompanying side dish.
Pro Tip
Add thin slices of salmon to the Pak Choi before placing the tray in the oven for that extra protein kick.
